Graze - Restaurant Design

Graze was the first city centre location for regional brewers Bath Ales, and they came to Simple Simon wanting a new restaurant design concept. This was a new business model where food sales were expected to equal or exceed wet sales.

An interior was required that was stylish enough to be able to appeal to a city centre market and traditional enough to appeal to Bath Ales loyal customer base. The final restaurant design scheme was inspired by bars and chophouses in London and New York, the interior of Graze is zoned with high quality bespoke furniture at different heights and with creative lighting schemes.

Restaurant Design Detail

The decor accentuates the chop house theme in Bath Ales' usual tongue-in-cheek manner. It includes a sculptural cow’s head and black and white portraits of butchers. During the first summer of trading Graze broke the Bath Ales takings record for a single day. Some of the restaurant design and bar design lessons learned at Graze were introduced to Simple Simon's refurbishment of the Hop Pole.
